Summer Veggie Blend

I absolutely love all things summer, especially fresh vegetables...squash, zucchini, cucumbers, tomatoes and the list goes on and on. Fresh veggies are like the summertime “comfort food”! We spend most of our days outside and because it’s so hot, we eat less which is why eating a plate full of fresh veggies is nearly the perfect meal.

For years, this recipe has been a favorite of mine. My aunt first made it back when I was in college and I look forward to making it every summer when the fresh veggies start to arrive. It doesn’t require a lot of ingredients and it’s super simple to make.

I’ve never known it to have a name so I just call it the Summer Veggie Blend.


Ingredients:

  • 4-6 small/medium potatoes

  • 2 squash

  • 2 zucchini

  • 1 medium onion

  • 1/2 block of cheddar cheese

  • 1/2 stick of butter



Preheat oven to 400 degrees. Peel and cut potatoes. (I cut mine fairly small so they will cook faster.) Place in bottom of 9x13 baking dish. Slice squash and zucchini (fairly thin) and place on top of potatoes. Next, chop and add onion. Slice and add butter. Cover with foil. Bake 35-45 minutes or until veggies are soft. Remove from oven and add cheese. Cover and bake approximately 15 minutes or until cheese is melted. Enjoy!
